Abstract

Ushbu maqolada nozik ovqat mahsulotlarini saqlashda 
qo‘llaniladigan zamonaviy texnologiyalar tahlil qilinadi. Sovitish, muzlatish, vakuum 
qadoqlash, modifikatsiyalangan gaz muhitida saqlash (MAP) va innovatsion 
konservatsiya usullari mahsulot sifatini saqlash va mikrobiologik xavfsizlikni 
ta’minlashdagi samaradorligi bilan ko‘rib chiqiladi.
