Abstract

Annotatsiya 
Fermentatsiya  sharoitlari  postbiotik  metabolitlarning  tarkibi  va  biologik 
faolligiga  sezilarli  ta’sir  ko‘rsatadi.  Postbiotiklar  –  probiotik  mikroorganizmlar 
(masalan,  Lactobacillus  va  Bifidobacterium  turlarining)  fermentatsiya  jarayonida 
ishlab chiqaradigan o‘lik hujayralar, ularning komponentlari va metabolitlari (SCFA, 
bakteriosinlar, EPS va boshqalar) bo‘lib, ular jonli hujayralarsiz ham sog‘liq uchun 
foydali ta’sir ko‘rsatadi. Ushbu maqolada fermentatsiya parametrlari (harorat, pH, oziq 
muhit tarkibi, vaqt, kislorod darajasi) metabolitlar hosildorligi va faolligiga qanday 
ta’sir etishi tahlil qilinadi. Optimal sharoitlarda (masalan, 37°C, pH 5.5–6.5) SCFA va 
bakteriosinlar  miqdori  ortadi,  bu  esa  antimikrobiyal,  immunomodulyator  va 
antioksidant xususiyatlarni kuchaytiradi.
